Chocolate Mint Ice Cream Pie

Happy Birthday dear friend!!

Yesterday was Anne’s birthday. Anne is known for her love for ice-cream especially Baskin Robbins ice-cream. Back in the days, we had sort of a Baskin Robbins tradition, where we spent a whole evening of a 31st day of a month stuffing our faces with ice-cream until our brains froze and we were so full, we cannot eat anymore. And I can still remember the taste of the first spoonful of my favourite ice-cream..fuh..

So, to commemorate Anne’s birthday, I made Chocolate Mint Ice Cream Pie. It’s her favourite ice-cream flavour. Plus, I love making this dessert. (Sambil buat, sambil suap aiskrim ke mulut..hahahaha..)

Chocolate Mint Ice Cream Pie

Preparation time: 30mins (including freeze time for cereal base)
Freezing time: until the ice cream pie is firm
Serves 2-3 people


50g plain chocolate
25g butter
30g crisped rice cereal
chocolate mint ice cream*
extra melted chocolate for decoration

*You can use any of your favourite flavours.


1. Line a pie tin with plastic wrap. In a heatproof bowl set over a pan of boiling water or in a microwave, melt the chocolate and butter.

3. Once melted, gently stir the chocolate into the cereal. Let cool for 5 mins.

4. Press the chocolate coated cereal over the bottom and sides of the pie tin. Refrigerate until it hardens.

5. Remove the ice cream from the freezer and let soften for 5 mins.Spread the ice cream evenly into the pie tin.

6. Wrap with plastic and freeze until firm. Once firm, remove all plastic wrap.

7. For decoration, I just drizzle melted chocolate over the ice cream pie. This look so pretty yet so simple to make.
