Hershey's "Perfectly Chocolate" Chocolate Cupcakes


Question: What would one do if he/she craves for a yummy chocolate cake on the occasional LAZY day?

Well, other then buying it from a bakery somewhere, why not bake it yourself. This is one of my favourite one bowl chocolate cake recipe. Easy enough even on a lazy day. Just mix everything in a big bowl, add hot water and pop it in the oven.

Voila!! A chocolaty indulgence in just 30 mins. The texture of the cake is soft and moist. Especially delicious eaten the next day. No butter in the recipe. Less guilty factor is a plus for me. Yay!!

Hershey's "Perfectly Chocolate" Chocolate Cupcakes

Preparation time: 10 mins
Baking time: 22 mins
Makes 22 cupcakes (The recipe said 30 but I got only 22)


Ingredients:

1 3/4 cups sugar (I used less sugar)
1 3/4 cups plain flour
3/4 cup cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Directions:

1. Heat oven to 175°C.

2. Mix together all the ingredients except for the boiling water in large bowl and beat on medium speed of mixer 2 minutes.


3. Stir in boiling water using the spatula. (Do take note that the batter will be very thin. The first time i made this recipe, I was a bit worried because the batter looked more like chocolate smoothie than a chocolate cake batter. In the end result was fantastic. So no worries k.)


4. Line muffin tin with paper bake cups. Fill cups 2/3 full with batter. Bake for 22 minutes.

5. Let cool completely. When cool, frost with chocolate frosting. (Recipe below)


"Perfectly Chocolate" Chocolate Frosting
This frosting is very pretty and shiny. A bit on the sweet side but still yummy. It compliments the cupcakes well. (I halved the recipe because i didn't want to frost all. My parents like the cupcakes plain. The halved recipe is enough to frost 15 cupcakes)

Ingredients:

1/4 cup (about 58g) butter (melted)
1/3 cup cocoa
1 1/2 cups icing sugar
half of the 1/3 cup milk (I'm lazy to estimate what's half of a 1/3 cup)
1/2 teaspoon vanilla extract

Directions:

1. Stir in cocoa into the melted butter. Alternately add icing sugar and milk, whisk until all mixed well. Stir in vanilla. Then, frost the cupcakes the way you like. I just slab it on top of the cupcake using my spatula.
