Udon Noodles in Vegetable Soup

I made this for dinner. It's a vegetarian dish. It's healthy and easy to make.

Udon Noodles in Vegetable Soup

Preparation time: 30 mins (mostly for chopping the vegetables)
Ready in 10 mins


2 cups water
1 chicken stock bullion
2 tbps of soy sauce
1 small onion, sliced
2 garlic cloves, chopped
about 1 inch of ginger, sliced
2 bird's eye chillies, chopped
salt and pepper for seasoning
Vegetables (Just follow your preference. I used carrots, cabbage, dried shiitake mushrooms*, straw mushrooms and oyster mushrooms)
1/2 package firm tofu, cubed
udon noodles

* For the dried mushrooms, I soaked them in water overnight. That way, I don't waste my time waiting for the mushrooms to absorb the water.


1. Cook the udon noodles according to instruction on the package. Drain.

2. Add in all the ingredients except for the tofu and noodles and cook until the vegetables are half-cooked.

3. Then, add in the tofu. Let the soup simmer for a while. Season with salt and pepper.

4.Place a portion of the cooked udon noodles in a bowl and pour the vegetable soup over it.

5. Eat while it's hot. Especially delicious on a rainy night.
